EU Product Labels
Nutrition information is given both per 100g and per serving (Council Directive 90/496/EEC, as amended by Commission Directives 2003/120/EC and 2008/100/EC). This includes the energy contribution of dietary fibre content and the latest Recommended Daily Amounts (RDAs) for vitamins and minerals.

Nutrition information panels can be printed out in any one of seven languages: English, French, German, Italian, Spanish, Dutch, or a seventh language of your choice.

Recipe nutrient composition is compared with EU legislation and potential nutrition claims for the product identified.

Labels can include salt equivalent contents and Weight Watchers Points values.

Nutrition Panel For Front-of-Pack (FOP)
This can be prepared, in any one of the following formats, used in the UK:
1. FSA panel, showing the fat, saturates, sugar and salt contents of the product per serving and indicating whether each of these is "low" (green), "medium" (amber), or "high" (red).
2. Food industry agreed panel, showing energy (calories), fat, saturates, sugar and salt content per serving and incorporating the GDA for each.

3. FSA/food industry combined nutrition panel that shows:

  • Energy, fat, saturates, sugar and salt content per serving
  • Whether each of fat, saturates, sugar and salt contents are "low" (green) "medium" (amber) or "high" (red), in accordance with FSA criteria
  • Percentage of GDAs provided by each of these nutrients, using GDAs as defined by the Institute of Grocery Distribution (IGD).

An independent panel have completed a research study to identify which FOP nutrition panel is best able to help people choose products to help them build a healthy diet. Overall, the balance of evidence demonstrated that the strongest FOP label is one which is the FSA/food industry combined panel, as described above.

Food Composition Databank

CARAT can be supplied with either the UK or USA nutrient databank. The program includes a range of other ingredients that are used by manufacturers, such as modified starches, maltodextrin and food additives. You can also add your own ingredients to the nutrient databank, e.g. data from suppliers' ingredient specifications.

You can store up to 100,000 recipes.

Ingredients List There is a Label Ingredient Order calculator, enabling this to be produced rapidly. You can combine ingredients, incorporate sub-recipes and reconstitute dried ingredients, all with automatic placement in their correct list positions. As the food composition database includes additives, these are also included in their correct list positions, together with their technical function, e.g. colour - riboflavin.

You can include the percentages of specified ingredients as required by QUID (Quantitative Ingredient Declaration) legislation. The label ingredients list can then be automatically stored in the recipe database.

For the EU, label ingredients lists can be printed out in any one of seven languages: English, French, German, Italian, Spanish, Dutch, or a language of your choice. There is a database of ingredient descriptors for each language. You can edit these, enter descriptors for your custom foods and for one additional language. There is a help system for translation of ingredient descriptors.

The Label Ingredient Order calculator represents a considerable time saving, particularly for complex recipes.

Special Diet Lists There are up to 24 flags for each recipe, e.g. gluten free, milk free, vegetarian, etc. Lists of products suitable for a range of special diets can then be rapidly prepared, including combinational lists, e.g. gluten, milk, egg and soya free. This enables fast responses to enquiries from customers, consumers and health professionals.

CARAT can also scan the stored recipes for user-specified ingredient codes. This function is invaluable when preparing lists of products suitable for the more unusual special diets, e.g. products free from cinnamon or free from garlic and onion. This function can also be used to help your company to rapidly identify products containing a particular ingredient if there is a food issue resulting in consumer concern.

Product Development There are innovative features to help when developing recipes to specific nutrition criteria, e.g. less than 3g of fat per 100g. For a range of nutrients, you can see how much of each nutrient is provided by each ingredient in the recipe. You can then try "what ifs" with recipe ingredients and weights and immediately view the effect of these changes on the nutrient composition of the recipe. CARAT also identifies potential nutrition claims for the new recipe (EU).

Cost Analysis You can calculate the cost of a recipe, if you have cost information for each ingredient.
